Weeknight Dinners: White Turkey Chili in the Slow Cooker

This recipe comes from Go West contributor Edith Tarter, who notes that it goes great with a cranberry margarita. While we're out of leftover turkey from Thanksgiving, I think I'll give this a try with the optional chicken, instead. Hmm. Can I still fix myself a cranberry margarita? -- Tara
White Turkey Chili in a Slow Cooker
Ingredients:
2 cups cooked turkey, diced (or chicken)
1 onion, chopped
2 cloves garlic, chopped
1 can chicken broth
1 teaspoon cumin
salt and pepper
2 cans great northern beans, including juice
1 can corn, including juice
Juice of 2 limes
2 tablespoons cilantro, chopped
Directions:
Mix everything BUT lime and cilantro in slow cooker and cook on low 3 hours or so. Add lime juice and cilantro and cook on low 20 minutes. Serve with a dollop of sour cream and another squirt of lime.
